Blueberry crumble muffins
Jump to recipe12 muffins · 40 minBakery-style muffins bursting with blueberries under a buttery crumble.
Tall, domed muffins are not a bakery secret. They come from a very hot oven for the first five minutes, which sends the batter up before the crust sets.
Fill the cases right to the top, scatter the crumble generously, and resist opening the oven door.
Fresh or frozen
Frozen blueberries work beautifully. Add them straight from the freezer so they do not bleed into the batter.

Method
Heat the oven to 200°C (400°F) and line a 12-hole muffin tin with paper cases.
Rub the crumble ingredients together with your fingertips until they form small clumps, then chill while you make the batter.
Whisk the flour, baking powder and salt in a large bowl. In a jug, whisk the sugar, oil, eggs, milk and vanilla, pour into the flour and stir until just combined. Fold in the blueberries.
Fill the cases almost to the top and scatter with the crumble. Bake for 5 minutes, then lower the oven to 180°C (350°F) and bake for 15 to 18 minutes more, until a skewer comes out clean.
Notes
Keep in an airtight tin for 2 days, or freeze and warm through in a low oven.
